Distillery plan moving forward in Penn Forest

The Holy Spirits Distillery is almost a reality.

Sky Fogel of Sky LLC is planning on building the distillery on property adjacent to Skirmish USA on Meckesville Road in Penn Forest Township.“The plan received conditional approval from the Carbon County Planning Commission in February and has now received a conditional final approval from the Penn Forest Township board of supervisors based on a recommendation from the township’s planning commission.“With the approval by Penn Forest (last week), we are ready to go,” Fogel said last week.“We can now subdivide the property and then the county (sewage enforcement officer) can approve the sewer plan, which has already been submitted.According to Fogel, the distillery will operate on a limited distillery license from the Pennsylvania Liquor Control Board.The distillery will initially be producing rum, vodka and gin.Products made by the distillery will be available for sale on site and there will be a tasting room where visitors can taste up to 1.5 ounces of the product.Fogel said that the building design will be “churchesque” to go along with the name. The design has not been finalized yet.The groundbreaking is set to begin in June.“We hope to finish within 14 months. That puts us at around the end of August 2018,” Fogel said.The Penn Forest Township supervisors granted the conditional final approval based on recommendations from the township engineer and the township planning commission. The drawings were not available in time for the meeting and will be forwarded to the board for signatures as soon as they are complete.The conditional approval included seven waivers related to setbacks, tree heights, traffic flow study and landscaping/buffering. The township engineer advised the board that none of the requested waivers were critical.Judy Knappenberger was the only supervisor to vote no on the conditional approval.The approval was conditioned on requirements for a financial security agreement, an improvements/maintenance agreement and the engineer’s comments to be finalized.

A skid-mounted mash tun and copper still is different from most in that it has interchangeable heads allowing for the distillation of several different types of spirits.
