Here's another quick weeknight meal that will get you in and out of the kitchen in no time.
A dash of sesame oil and soy sauce gives this dish an Asian flair.Sesame Chickenand Veggies3 boneless, skinless chicken breasts, cross cut into 1/2-inch strips1 cup flour4-5 carrots, peeled, cut lengthwise into 2-inch strips1 medium sweet onion, chopped1 red bell pepper, chopped2 cups broccoli2 tablespoons sesame oil, divided1 tablespoon soy sauce4 tablespoons butter1-2 tablespoons waterDash of savory1 cup flourDredge chicken strips in flour.Melt butter in large skillet, then add 1 tablespoon of the sesame oil and the soy sauce. Brown chicken, about 3 minutes. Remove from pan.Add water, remaining sesame oil and savory. Sauté vegetables, until onions are soft.Add chicken, stir together, then cover and simmer for 10 minutes.Serve over rice.For more flavorful rice, cook 1 cup of rice in 2 cups of chicken broth and 1 tablespoon of butter for about 20 minutes, or until liquid has been absorbed and rice is tender.
